CARROT CAKE

Hello everyone,
It’s World’s Health Day today i.e. 7th April 2020 and I thought to bake something healthy and yummy.So,here comes the recipe of drooling carrot cake with wholegrain wheat flour, jaggery powder,virgin coconut oil and lots of roasted seeds and nuts and secret ingredient CARROT.Also ,I am starting my food blog and sharing first recipe.Hope you all will like it.





<<NO MAIDA (ALL PURPOSE FLOUR),NO REFINED SUGAR AND NO REFINED OIL>>
*INGREDIENTS*
1)WHOLE WHEAT FLOUR/ATTA: 1cup
2)BAKING POWDER: 1tspn
3)BAKING SODA: 1/4tspn
4)CINNAMON POWDER:1/2tspn
5)INSTANT COFFEE:1/2tspn
6)JAGGERY POWDER/GUR/COCONUT SUGAR:1cup(use less,if you like katt mitha)
7)SALT:A PINCH OR 1/8tspn
8)CURD/DAHI: 1/2cup
9)MILK: 1/3cup
10)COCONUT OIL/ANY VEGETABLE OIL:1/4cup
11)GRATED CARROT:1/2cup
12)ROASTED SEEDS AND NUTS:1/2cup
METHOD:
1.In a bowl,add jaggery powder,curd,milk and oil.Whisk them properly till jaggery got dissolved.(You can use blender to mix them quickly).
2.Sieve all dry ingredients in a same bowl-Atta,baking powder,baking soda,coffee,cinnamon powder and salt.
3.Combine properly dry ingredients with wet ingredients to prepare a smooth batter.(Don’t over do it)
4.Add half roasted seeds and nuts and keep rest for later.
5.Add grated carrot into the batter.Mix well.
6.Grease a baking bowl with 1tspn of oil/butter and line with parchment paper.Pour the batter and tap it for few times to level it up.
7.Add leftover seeds and nuts on the top.
8.Place pressure cooker on the stove with stand.Heat it up for 10mins, before placing cake into it.
9.Cover the cooker with lid but without whistle on low flame,for approximately 40-45mins.Check after 40mins,if not done,bake for another 5-10mins.
10.Cool down the cake properly,before de-moulding it.
11.Cut the cake and enjoyyyyyy.
TIPS:
1.Never over-mix the mixture.
2.No over-heating.Better to keep an eye on cake after 40 mins.
3.If you don’t have parchment paper,no problem.Grease the bowl with 1 tspn of oil and dust some flour.And you are good to go.
4.Before adding nuts and seeds,cover them with 1tspn of flour.This will help in avoiding sticking to nuts at the bottom.
